Buffalo Chicken Dip

Packers game is on tonight! So I decided to make my hubby a little treat while we watch the game. What guy doesn’t like Buffalo flavored food?! This stuff takes the cake, er, dip! You can’t tell it’s low-fat! All you’ll taste is the creamy buffalo goodness!

I got this Healthified Buffalo Chicken Dip recipe off of www.bettycrocker.com/recipes. Their website has an entire section of healthy options for your favorite foods. I love it! And this dip!!

Prep Time: 10 mins

Cook Time: 30-60 mins

Servings: 12

Calories: 110 per serving (not including crackers)

Ingredients:

2 Chicken Breasts, shredded (or 1 1/2 cups)

1 (8 oz) package Cream Cheese, 1/3 less-fat variety

1/2 cup Lite Ranch, Naturally Fresh brand is my fave! Find it in the produce section.

1/3 cup Frank’s RedHot Original Sauce

1 cup (4 oz) Monterey Jack and Cheddar Shredded Cheese, reduced-fat

2 TB Water

2 Green Onions, chopped

Whole Wheat Crackers or Celery for serving

Directions:

- Mix the cream cheese with an electric hand-mixer on low until smooth. Add the ranch, hot sauce and water. Beat again until smooth.

- Stir in the chicken and cheese. Add mixture to your crock-pot, set on high for 30 mins , or on low for 1 hour. *Or, bake in oven on 350 degrees for 35 mins.

- Stir the dip and transfer to serving dish, top with green onions. Best served warm.

Enjoy!!
