This “recipe” is very simple, but one of my favorites so I had to share. My friend’s mother had this as a first course for dinner one night displayed on a bed of fresh spinach and topped with a cherry. It was so good I have been replicating it since! My usual way of eating it is featured in this post, just plain ol’ cottage cheese and pineapple chunks. I eat it as a light breakfast or a pre-workout snack. This will keep you full and hold you over for only 160 calories. Not bad!
I usually portion out a few servings and put them away in tupperware for easy grabbing later.
1 heaping Cup 2% Cottage Cheese, I like the large curds kind
1 Cup Fresh Pineapple Chunks *if you buy canned, try not to get the kind soaking in syrup
Freshly Cracked Black Pepper
