Slow Cooker Pulled Pork with Cole Slaw
Slow cooker recipes during the week get me excited for dinner. What’s even more exciting than an already cooked dinner when I get home? The easy clean up! This recipe is delish and I’ll definitely make it again.
Cole slaw and pulled pork go hand and hand in my house. The best way to eat them? Together, piled high on a sandwich. You have to try it.
Pulled Pork

Calories: About 210 per serving
Ingredients:
2-1/2 lbs Boneless Pork Loin Roast
2 tsp Red Wine Vinegar
2 tsp Hickory Liquid Smoke
1 tsp Garlic Powder
1 tsp Sea Salt
1 cup BBQ Sauce
Directions:
~ Place raw pork loin in your slow cooker and top with remaining ingredients, except for the BBQ sauce.
~ Cook on high for 6 hours or medium for 8 hours.
~ Remove the pork from slow cooker and shred the pork with two forks, carefully as the pork is hot. Do not drain the liquid from slow cooker.
~ Return the pork to the slow cooker and mix in the BBQ sauce. Cook on high for another hour.
~ Serve and Enjoy!
Skinny Cole Slaw
Servings: 8
Calories: 55 per serving
Ingredients:
1 Bag of Pre-shredded Cabbage Mix
3/4 cup Light Olive Oil Mayo
3 TB White Vinegar
2 TB Sugar
1 TB Mustard (Dijon or Deli Style)
Black Pepper
Directions:
Mix all ingredients together and refrigerate for about an hour to let the flavors blend.
*Can make a day ahead of time, but only keeps for a couple days altogether.
