Calories: 75 calories per “slice”
3 Medium Zucchinis
1 can Diced Tomatoes, drained *I love Del Monte Diced Tomatoes with Basil, Garlic, and Oregano
3/4 cup Low-fat Mozzarella Cheese
3 TB Parmesan Cheese, freshly grated
Additional Toppings, like mushrooms or peperoni (calories not accounted for extras)
~ Preheat oven to 400 degrees and line a baking pan with foil (I have a stone pan so I didn’t need foil nor oil)
~ Rinse and dry the zucchinis. Slice each one in half, longways. Scoop out the seeds with a soup spoon, as this allows for a concave area for the tomatoes.
~ Divide the drained tomatoes evenly into the six halves. Top each half with two tablespoons of mozzarella cheese, then one tablespoon of parmesan cheese. Finish with any additional toppings you’d like.
~ Bake for about 20-25 minutes. Keep an eye on the cheese to tell when they’re done.
